Is there a clever way to test the phone and car stereo to see which device is dropping bluetooth?

I'd hate to replace my phone if the car stereo is the defective one!

Sure. Test your phone with another BT device (headset, speakers, etc).

There are an annoying number of permutations of bluetooth stack, bluetooth chipset, and bluetooth profile availability. Channel hopping is not always well implemented. Unfortunately not all this information is published in a findable form. Android phones do have apps for exposing this information. That's half your battle. For a bit of money there are devices that can interrogate your stereo.

A simpler option is an AUX input.
