I realize that it will switch back and forth between display adapters, but my problem is that before a game launches, it detects my hardware and will set it to the Intels capabilities, not the AMD. So then I have to go in-game and change the settings (which require a restart afterwards) but after I relaunch it, the computer is using the Intel again and the game sets it back to low settings. The games that are doing this are Skyrim and War Thunder. It's rather annoying and I'm wondering if there is a way I can select which display adapter I want to use before I launch a game, then just revert back to intel's when i'm done?

Make sure your graphics drivers for both AMD AND Intel are up to date.

I'm not familiar with AMD (never bought AMD GPUs before ) but I think i can still help.

In the AMD settings, is there any type of game profiles?
