Well first of all Office 2007 IS an upgrade. The reason it is an upgrade is because it has lots of new features that previous versions of office didn't have. A different user interface has nothing to do with it being called an upgrade. the GUI is just a marketing technique.
And you always have a choice. And if you like the old user interface, then stick with Office 2003. And you can even move to free office suites like Open Office which will all the functions you need for Word, and Excel. And as for Outlook, you can switch to Thunderbird 3, which is new and improved! So no one is taking away your choice. Don't like it? Look for alternatives! There are always alternatives available for everything.
