I would be using the laptop for surfing web, watching videos, and doing a little programming which I had just started learning. All three laptops, the price are very close, only $50+++ difference and so, I need your advice on which one you would pick and why..

Yes, I did check, they do not have E560p. http/shopap.lenovo.com/my/en/laptops/thinkpad/edge-series/
Oh ya, is it a good choice to upgrade to UHD..?? its a additional $250-$300 though... Do u think its worth it..??

no it is not worth it , I would get i7 cpu upgrade over UHD screen , but make sure the FHD is IPS...

Yes, same thoughts.. B'cuz I compare 4k laptops with 1080 ones and I really can't tell the differences..
