OCR -- jpeg or tiff?

I am scanning book pages in order to run them through OCR (I use ABBYY FineReader)
how should I save the files -- jpeg or tiff?
and at what dpi?
It is text only, not printed very clearly. (old book, before digital era)

I am using the native windows fax and scan tool
my "scanner" is an HP Officejet Pro 4-in-1

I usually scan to PDF and then let Acrobat do the OCR. But back in the old days, tiff was the more common format.

my text is english with hebrew words interspersed, I find that ABBYY is the only software that can handle it.

Government and Law (As in Lawyers), possibly libraries as well, tend to stick with TIFF format. If this is not being used with any of them, I would stick with JPEG.

about the dpi, I found in the ABBYY help manual that they say to use grayscale mode and a resolution of 300 dpi for best results.
