Phone shutting down.

My Huawei p8 shuts down and, when I turn on again, instantly shuts down... Almost like the battery is dead. When I plug it in to the charger, it starts up fine but I know the battery is at least 60%.

This is very common and you probably just need a new battery.

When a battery is going it will often show an incorrect % of power. It is because the battery is able to hold less and less power, so this makes the amount it says it has incorrect. The only fix is to replace the battery.
