There is a program called DVD to pocket PC which does all this in one easy
step. Put the DVD in your drive, select which of 2 quality settings are
offered and hit go, in about an hour you have a 120-180 mb file on your
desktop that you can load on your card and play in windows media player on
your pocketpc.

I've been using 'DVD2AVI' to extract the DVD tracks and at the same
time convert them down to 320x240 screen size (or whatever will fit on
screen).
Once I get the file as an AVI (about 2h per DVD on an Athlon 1700) I
take the file and load it in windows media encoder. Just set the
encoding profile to 'Pocket PC' (you can tweak it a bit if you like to
VBR Variable bitrate video) You'll probably get 44khz stereo audio,
though I often go for 32k for films as the dynamic range isn't that
great from DVD.
Run the encoder and say a 1.5h film will end up at around 160meg of
windows media video.
Then you can copy this file across to your PPC, though I've got a $10
memory card reader which makes it much much quicker to copy, direct
to the card.
Job done ;-)
