Record on Foxtel using lg universal

When I connect up lg universal remote to foxtell I cannot record

I am guessing that the LG remote doesn't operate all the functions (including record) on the foxtell. If the remote doesn't have the IR codes you can't add them.
You will need the original remote or one like the Logitech Harmony which is programmed online with their huge database of IR codes.
