How can I connect my HDMI Roku stick to an old TV without HDMI?

So the logical question one must ask is, what kind of video-IN connections does the TV have?

You may want to look for a newer TV with HDMI, unless yours is HD the Roku display won't look very good on it. A used 32" HD TV should not be much more than $100.
