I have a 47" Samsung TV, a 1080p Projector, a sound bar, and three game consoles. What would be the best way to connect these?

Solution
Since the TV doesn't have any outputs you won't be able to get audio from the internal tuner or "smart" apps.
The simplest way is to connect the 3 game consoles to an HDMI switcher that has optical audio out like this one

and connect it's HDMI output to an distribution amp (a cable will not work)

to split the HDMI out to both the TV and the projector Connect the optical out of the switcher to the soundbar.

Solution
No it won't affect the picture or sound.
When HDMI is not working properly if doesn't screw up the signal. It makes the detection of the connection intermittent or not at all. So if you have a source, cables, splitter, AV receiver, display combination they all have to meet the HDMI standards.
When you get a combination that doesn't you have problems. A cable for instance may work fine with one source and TV and not with the same TV and a different source because the new source doesn't meet HDMI specs or the old source could compensate for the cable being off spec. Can drive you crazy especially with long cables.
