Every time I look at laptops they always seem to have an i7 6700hq. Why is this? I want something with at least the performance of an i5 6600k.

Solution

Heat. There is only so much heat that can be dissipated in a laptop case.
More performance = more heat.

Secondarily, battery life.
More performance = shorter battery life. And that's why you buy a laptop...to run on the battery.

The main reason is heat and battery life. Remember a laptop is mainly designed for portability now power. This is why they cost more than desktops.

i5-6600k = 91w TDP - running at stockspeed

i7-6500HQ = 45w TDP, but it can be lowered to 35w TDP if it is configured to run below standard speed.

91w is pretty power hungry and produces a lot of heat for laptops.
