There may be some differences, but these are really just wires with RCA connectors on each side. Yes they will work as long, as you say, that the cables are plugged into identical sockets.

All video cables are 75 ohm coax so you can use 3 composite video cables as one component video.
Most audio cables are also 75 ohm coax and can also be used as video cables.
Some audio cables are a shielded twisted pair and can't be used as video cables.
A video cable can almost always be used as a coax digital audio cable.
