Looking to play minecraft at 60fps 1080p

Yes, you should be able to run minecraft at 60 frames 1080p.

You won't be able to play the game at 1080p as the screen res is only 720p.

Yea noticed that not long after posting it. Seems it will run minecraft @60fps so picked it up today as that's all it will be really used for and maybe watching some YT videos
