YouTube video quality problem with G-S7

Okay a couple weeks ago I upgraded my phone to the new Galaxy S7 and At nights I would watch YouTube before I go to bed on my phone connected to my wifi. Until last night I was able to watch any video (if it had) 1080p 60FPS, but now it only has video quality up to 480p even with videos with 1080p 60FPS.
Is there any fix to make the quality higher than 480p?

The app has a quality setting, and also at least T-Mobile has a service where they offer a data saving option that lowers quality automatically for you, make sure something like that is not enabled.
