Good morning and happy holidays,

I have a Pioneer VSX-D411 receiver with both coaxial and Toslink digital audio inputs (no HDMI). I have an HDTV and projector. The coaxial audio input on receiver is connected to the TV. The audio when using the projector is analog. Would a analog to digital audio converter connected to the Toslink input improve the 5.1 audio quality much?

The ADC in your receiver is probably better than the one in that link. Certainly not worse.
If you want to improve your audio then you want a digital audio output not an analog output converted to digital which would be stereo.
I would suggest you get an HDMI input selector with audio extraction like this one

It will give you a digital audio input for the receiver that will bypass the ADC completely and give you digital surround sound. Far superior to the analog surround sound that you have now.
It has two HDMI outputs so you can use the TV and projector. If you use the TV internal tuner or smart functions then you would use the TV audio out to another input on the receiver.
