So I'm looking to buy a laptop to run 2-3 virtual machines for pen testing and also to practise setting up windows server 2012. Now I don't have a huge budget ($500 CAD before tax is currently my budget).

I've been doing some looking and found that I could get something with 8GB of ram and a hyper threading capable i5 for around $400-$500 but that it would be older Intel chips (2011-2012 chips) and refurbished.

Now my question is, would buying older hardware be a reasonable bet given what I want to use the machine for? I know for running multiple VMs that RAM and processor cores will play a huge role but when it's technology that's 5-6 years old is it still worth it?

8GB RAM is not nearly enough for 3VMs and Server 2012. At least 16GB RAM, 32 would be better. You should figure on 4GB RAM / VM for anything useful.
