Very strange. It should be showing 2 cores, 4 threads for the 560m. Try downloading something like Speedfan to see if it will ID all of the cores/threads. Otherwise, I'd get in touch with the laptop manufacturer to see what the deal is.
Edit: Here are intel's specs on it:

And here is a link to how it should look on CPU Z:

Well, I'm not sure what I'm supposed to be looking for. Here's the main window of SpeedFan 4.42:
Just some other info: This laptop is a Sager NP5135 (built on the Clevo B5130M platform). Specs are as follows:
Intel Core i5-560m
4 GB RAM (apparently at 667 MHz according to CPU-Z ><)
500 GB 7200 RPM HD
Windows 7 Professional 64-Bit
nVidia GT425M 1 GB
Edit: I just rebooted and SpeedFan only reads 1 core now. I had previously selected "Number of processors" to be 2 under the boot config... and changed it to 1. Now, when I go back, it doesn't give me the option to select 2 processors.
Edit2: Now it's down to 1 thread... definitely gotta call Sager tomorrow (day after Christmas).
Edit3: I'm still pretty new to Windows 7. Under the boot config, how many processors should I be booting up with? I had set it to 2 previously and that's when it was showing 1 core, 2 threads. Using EasyBCD, I set it to 4 and now Cpu-Z shows 2 cores, 4 threads while Task Manager shows 4 cores. Is this correct or no?
