Connecting 1 monitor and using your laptop screen for the 2nd monitor is fairly trivial: just plug the monitor in, and set your display option to Extended Desktop.

To plug 2 monitors in is... difficult. If you have 2 video outputs (1 VGA + 1 HDMI or something similar) then yeah, it's doable, but otherwise, you may have to resort to something like this:
