Would like to connect Apple TV (1 HDMI out) BluRay Player (1 HDMI out) Vizio TV (1 working HDMI) and cable box (1 HDMI out...it is connected to a second TV) to Sony receiver (has 3 HDMI INs and 1 HDMI out...and 1 HDMI IN that is "for audio") so that all can be displayed on a BenQ projector (1 HDMI). 5.1 speakers are connected to receiver. How would I make the connections? Would I need to incorporate an HDMI splitter or switch into the mix?

My thought is to run all the component's OUTs (including Vizio TV and cable box) to the receiver INs. For the cable box, I would use a splitter since the port is already connected to the second TV. Then receiver OUT to the projector. However, I only have 3 receiver INs (4 if you count the IN "for audio" whatever that is) vs. the 4 components.

Solution
If you don't have enough inputs for your devices, then get an HDMI switcher and use that between the devices and the receiver. Note that the receiver may have issues with detecting the signal once you switch around, you'll have to try it and see how it works.
