So, I'd need a laptop for college.. Mostly, I would use it for Photoshop/Illustrator and some mediocre gaming. This one seemed as a reasonable solution for the price:
Linux
Intel Core i5 3230M 2.60GHz
/ 3.20GHz (3MB cache) Ivy Bridge
AMD Radeon HD8750M 2GB
2x 4GB DDR3L 1600MHz
HDD 1TB SATA 5400rpm
Would I be able to run PS/AI fluently and do some occasional gaming, mostly MMOs, or some newer games at low-medium settings?

The processor on the GPU has nothing to do with the memory- they're only connected because the memory is used to store resources for processing. With the ProBooks's 720p screen, you do not require more gigabytes unless you're into heavy video editing. The GPU actually is several hundred low powered cores, and they're good for gaming because they can lighten the load, and evenly disperse light calculations amongst themselves. As I said, graphics memory only is a place to store resources to be rendered.
