Need help I would like to record and stream to a tv my cooking classes

I teach culinary at a highschool in Oregon I world uld like to use a camera to stream to my lap top and from there to a large tv on the wall. Unfortunately chrome cast won't work due to our network security. I would also like to record and publish the video to YouTube so my students can review it later. So I am looking for the best but also most reliable way wirelessly if possible thank you

For recording, you can use VLC media player, Camtasia, there are quite a few tools out there. The school should have an IT department to help you with things.
