once I uninstall an app on firestick will it then unsubscribe?

I want to insubscribe to an app on the fire stick that is charging my card but I can't remember the email I used to make my amazon account!

There is nothing we can do to help you to remember. If you can't logon to Amazon you can always do their "I forgot my account info" option.
