can i run my cable in to my cable box, then use hdmi to run to my laptop, then using a DVI adapter to run to my computer moniter to be able to watch cable on my monitor?

You cannot connect the output of the cable box to the laptop because it doesn't have HDMI input only output. If your monitor is HDCP compliant then you could connect the cable box directly to the monitor with an HDMI to DVI cable but would need a way to get sound.
Your cable service may provide a program or website that would allow you to watch cable on your monitor without the cable box.
