I would like to change my preexisting Raid 0 array in my laptop MSI GT70 to a raid 1. how would I do that if at all possible?

No. To make the OS stay working you need to clone/image it. In this case making an image of the drive. otherwise you will have to backup your data, and reinstall windows from scratch.
How big are the hard drives? As long as you don't have more data than the side of one of the hard drives, and have an external hard drive big enough to fit your data you could image your drives to the external, delete the RAID 0, make the RAID 1 then put the image back on your laptop.

understand you'll lose half your hard drive space. RAID 0 allows you to increase the disk space to be almost equal to the size of the two disks added together. RAID 1 does not allow this. The total disk size will = the smallest hard drive size.
 
Yup but just same thing. back up your files, delete the raid.

IF for some reason it won't let you use the Disk seperately, create a RAID 0 but only add one drive, and save. then make another RAID 0, add the other drive and save.

You shouldn't have to do that but just on some old server (like the 10+ year older) they don't just support a single disk. Still have to be in a RAID and thats how you got around it.
