How can I set the sd memory card as default intstead of the phone's on my samsung s5360?

I fail to understand this question.. You mean as the default install location for when you download apps? You want them installed on the SD card?

If so, the only way to do this is to root the phone (gain administrator privileges). And unfortunately no one on tom's will help you do this as it's against the rules. Modding/hacking/unlocking/pirating software is all forbidden. Personally I have an HTC Desire Z with an unlocked bootloader, no sim lock, rooted, and a custom version of Android.

In order to install the apps/move them to the SD card you would need the admin rights (root) on your phone. You can get more help at the XDA forums here if you want to go ahead and do that, just remember it voids your warranty and any mistakes made could potentially turn your phone into a paperweight: http/forum.xda-developers.com/
