The only audio output my projector

ViewSonic PJD7828HDL 3200 Lumens 1080p HDMI Home Theater Projector https://www.amazon.com/dp/B01A6UNGXQ/ref=cm_sw_r_cp_apa_H7Y-BbTWRZEMC

has natively is 3.5mm headphone. I plan to input a firetv stick into an HDMI audio extractor

ESYNIC 1080P HDMI Audio Extractor HDMI to HDMI + Optical TOSLINK SPDIF + Analog RCA L/R Stereo Audio Video Splitter Adapter Converter for Blu-ray Player Xbox PS3 PS4 https://www.amazon.com/dp/B06VVTQY8D/ref=cm_sw_r_cp_apa_i4Y-BbEPHX2CW

and then input to the HDMI on the projector. I would then have the option of optical or LR rca audio out from the extractorr. If I bought a 2.1 or 5.1 speaker set for example and plugged the optical wire into it would I get true surround sound or do I need to plug into some type of receiver first?

Also the HDMI splitter specifies it doesn't support Dolby digital Plus...will this be a huge issue?

Also looking for recommendations on speakers/equipment between 200-500$

Thank you to anyone able to help

Solution
A better solution might be to get a 5.1 receiver and speakers. Plug the fire stick into the receiver - it will pass the video to your projector and use the sound itself. Doable for $500 no problem.
