Using the headphone jack on TV to connect old AV system

I plan to connect my Xbox 360, Apple TV, and Blueray player to my TV via HDMI, and then connect my TV to my old Sony STR-DE505 via a RCA y-cable from the headphone jack. My question is, when I use these three devices via HDMI, will audio only play out of the stereo system from my AV receiver, and not just the TV's built in speakers?

Yes it will. Usually when you plug in headphones it turns off the internal TV speakers. Try it and see. Sometimes you turn them off in the TV menu.
Check the TV audio menu to see if the headphone jack can be set to line level out. Sony TVs have this kind of hybrid set up.
If the volume of the TV is set too loud your will overload the input of the receiver. That will product distortion regardless of how low you adjust the volume on the receiver.
