What processor give the "best" balanced performance for 1080p gaming when paired with a 1060 6GB?

My wife has offered to buy me a 1080ti so long as I build her a system in return. Since I am using a 1060 6gb in my current rig, that card is going to find a new home!

SO: what cpu will give me best balanced performance for a resolution of 1080p, 60 Hz, when paired with a 1060 6gb?

Intel is king. i7-8700K is king on CPU's under $350.

Any new Ryzen 5 or Coffee Lake i5 should do great, and still leave you some wiggle room for a gpu upgrade later. I am partial to Ryzen for AM4.....really excited about what I think is coming in cpu upgrades for 2019.
