Windows 7 Upgrading From Home Premium to Ultimate by itself!?

There are two laptops in the house I live in which both came with windows 7 home premium out of the box. However both computers started upgrading from windows 7 home premium to windows 7 ultimate by themselves without us doing anything (at separate times).

How and/or why did this happen??

P.S I checked system restore on one of the laptops and there is a restore point for windows anytime upgrade but we haven't even touched it.

Do you have any restore points before the Ultimate upgrade logged are you able to boot into windows still and use it as normal.
