Looking to mix 2 audio signals - one Bluetooth (from TV), one Bluetooth from iPhone or iPod (with BT adapter) into one set of Bluetooth headphones. Is this do-able? Any help would be greatly appreciated.

The only way I can think of that you could that would be to connect the analog audio output of both the TV (you might need a DAC for this) and Phone/iPod to a stereo mixer.
Then you would connect the output of the mixer to a bluetooth transmitter. Pair the headphones with that transmitter.
