Solution
Comes with Windows 8, to maintain support from Microsoft you have to patch to Windows 8.1, it can't do that out of the box. Easy enough to stick a USB drive in it and update the BIOS and then Windows.

I did mention the Dell Venue Pro, there are similar offerings from other vendors like HP. These are tablets that come with keyboard docks.

Over your budget would be the higher end Surface Pro 2 and Surface Pro 3, and a couple other 'twistable' or convertible tablet/ultrabooks. These would all include mostly plastic with a glass covered touchscreen.

Your "no plastic" requirement really limits things. Only high end laptops/tablets/ultrabooks are made with things like aluminum/magnesium/carbon fiber/wood (yes wood, usually bamboo)

You can...
MacBook Air? Sony Vaio? Only things I can think of that meet all of those requirements, and they would not be cheap.

Going to have to compromise on something to get a 'deal'

Give me something you got nothing over 800 dollars

Supposedly with a simple BIOS update to fix a bug with Windows 8.1 this is a fancy machine. Probably not going to have 6 hours of battery life though, most ultrabooks and tablets get around 4.5 hours.

Other option might be a Dell Venue with the extended battery/keyboard dock. That is a true tablet and with the keyboard/battey gets about 9 hours. Weighs as much as a standard ultrabook with the battery though.

What do you mean by
"]Supposedly with a simple BIOS update to fix a bug with Windows 8.1"
What is the bug?
And got any other solutions ?

You can also get the exact same performance, or better, out of much cheaper laptops. Another factor to consider is that many Universities have deals with specific hardware vendors and will offer up to a 20% discount on things from Dell, HP, Toshiba, Lenovo, sometimes Acer.

Okay so with plastic :/
But very very very light weight like 800gm

There isn't a laptop out there then weighs so little. Lightest I can find is about 1100 grams (2.4 lbs)

Toshiba Portege Z835-P330, you might be able to shop around and find this for $800.
