Adobe professional

I am running adobe 6.0 professional, i install and it allows me to open and edit text on some documents but not others, any reason for this?

Check the properties of the PDF documents!
Some of them made their PDFs completely safe & non-editable!
Even you can make the PDF's non printable also, options are their in acrobat itself!

All that depends upon the PDF creator & what reason they are created for!
