I have a USB C headphone that connects to my phone. Airplanes still have a 3.5 mm female plug for movies. How do I connect my headset? I can't find a female USB C to male 3.5 mm headphone jack.

Solution
You won't - USB is digital protocol, involving computer, so such an adapter, if existed, would consist of computer which plugs into 3.5mm socket.

I don't expect airlines to provide audio over USB (A, or C) anytime soon, so I would rather invest in some cheap headphones for airline use.

If this is true, then how do USB-C headphones work? The plug (and buds) don't seem big enough to carry any decent D-to-A converter. And it should still be possible to make an active "reverse" adapter, with electronics.
