HDMI and IR over single CAT5

Have two available cables to use: CAT5 and coax. I need to run HDMI and IR over them. I'm looking for any device(s) that will run HDMI and IR over CAT5 and the coax is available if necessary. E.g: HDMI over the CAT5 and IR over the coax. I've seen a lot of products that run HDMI and IR over CAT5, but they seem to require two CAT5 runs. I need to do this because the STB provided by Verizon FIOS is way to big for a kitchen countertop - just looks out of place.

Any suggestions would be appreciated.
