Just different compression algorithms. Two different ways of achieving
the same result: a smaller file that sounds something kinda like the
original.

Some people say that the Apple algo (m4a) sounds a little better than
mp3. The downside is that it isn't universally playable like mp3 (most
consumer devices fart when presented with an m4a, whereas even your
toaster will play mp3 files these days).
