Would a 29" 2560 x 1080 60hz 8bit HDR monitor be better than a 29" 2560 x 1080 75hz 8bit curved monitor, they are both the same price.

I will be gaming and watching videos. I will also be word processing and powerpoint.

There are hardly an games that support HDR yet, so it is hard to say if that feature will be beneficial for gaming. For movies it is nice to have!
There is marginal difference between 60hz and 75hz. If you play fast pace shooters, choose a 120-144Hz monitor, otherwise try the HDR one.
