proper setting for Logitech 2.1 speakers in Win 10?

I have a 2.1 system from Logitech and am wondering about configuring my Realtek soundcard settings in Win10. There is the stereo option, which I guess makes sense, but it doesn't mention 2.1. Also, there is the 5.1 option. I can select that, and uncheck all the other speakers besides subwoofer. I get sound when I do this, but it's quieter overall, and it's as if almost all the treble goes away from the main speakers.

Is "stereo" the correct choice?

yes. stereo is the choice.
your system has a left and a right channel, the SUB is only the low frequencies of BOTH, so there is no need for more than the 2 channels stereo provides.
selecting for more speakers will take the signal and further split away from the active speakers, hence the drop in output.
