Software to make multiple scans into one document

I want to get large historical documents onto my computer so am looking for software that will join together multiple scans into one large document.
Does anyone know of a good product? I initially saw Serif's "Scan, Stitch and Share" but on further investigating have seen Nuance's "Omnipage".
Has anyone ever tried to do anything like this and have any advice?

Any decent quality software that deals with documents and images can combine them into one document. It depends on what point you start from. Existing scans, multiple files you already have, what type of files you made, importing scans into one document from several scanned pages directly as you scan?

Omnipage will scan into one document from several sheets, but so will the default MS scanner if you select that option, and many other scanning programs.
