Steve Jobs could have just said it's their policy to no want Porn on thei App Store. It's that simple, and I have absolutely no problem with that line of argumentation. Nobody is obliged to buy an iPhone/iPad/iPod Touch, nor do they have a monopoly. So you DO have freedom of choice.
The reason I called him a hypocrite is for the simple fact that he does not maintain his argument consistent when those devices come preloaded with a non-censored browser called Safari, that allows you to watch Porn and look at as many cartoons as people want. And as long as political cartoons (and whatever they might chose to censor next) and porn is not ilegal or a crime and conforms to the law, they only have two arguments to censor it: company policy or morals.
If Steve Jobs orderd their engineers to created a porn filter/political cartoons/etc, for their devices, and thus keep their coporate beahaviour consistent, then I'd have no problem with his morals.
BUt as it is, it's not morals, because it's inconsistent and there hypocrite. It company policy, call it that. Trying to justify it with values is ridiculous because it's not coherent or consistent with Safari or any other browser they allow (recently Opera, for example.)
