Why is my home stereo so much louder when using the cd player than it is when i plug my phone into the aux plug in.?

The signal level is different from each device..

The AUX input is a "line in" and expects a certain voltage range.

The output from your phone is meant to drive an in ear headset, this has a much lower signal output voltage.

You should use the mic input on your stereo or use a pre-amp.

If you turn the volume on your phone up it likely can play louder than the CD player. The line output of a CD player won't drive headphones but your phone will.
