I need a solution to have a switch for 2 inputs to go to 2 outputs (Not at the same time).

Ideally, I need a single switch that will have a be able to output 1 of 2 inputs to 1 of 2 outputs. The easiest connectors to use would be 3.5mm audio jacks, however, I can convert if possible.

I.e. the switch will be completing one of these (Input -> Output):
1 -> 1
1 -> 2
2 -> 1
2 -> 2

Solution
You could use any audio or av 2 input selector and split the output. Doesn't matter if the other output gets the signal too? You could build one with 2 outputs.

by just putting another set of outputs in parallel.

Is there a cheaper option to a matrix?

Hmm, I don't think there's any cheaper than that? 40$ USD is actually the lowest I've seen for one.

You can always build one yourself if you're knowledgeable. But overall, if you want to use 3.5mm, such a vga matrix is easy to use and means you don't need additional adapters.

I have decided to build a variant on the article from http://www.instructables.com/id/Dual-Input-Audio-Switching-Circuit. I have bought the components for having two switches - One to change the input and one to change the output. Hopefully it works.
