What is the safest way to change Antivirus?

Downloading the new software, pull the ethernet cable out and uninstall and then reboot, install the new and put it online?

I mean. If I uninstall Bullguard while being online (browser closed) and then install ESET. Is there a chance someone can use that short window of time to harm the security of my computer?

(I dont know how this works).

I know. But there is still a small window between booting up after the complete uninstall of Bullguard, till the ESET install starts and its installed.

Thats why I asked.

You don't need to go offline to uninstall your current AV. There is no benefit to it. As far as the URL you linked, I have already replied there.

The best way to address your concern, is to make sure you've downloaded a quality AV realtime shield.
