The SIM number is the cellphone's number. You need to contact your provider and have the number and the phone associated with it deactivated. They know what SIM is using that number and the thief will not be able to connect to the network using that SIM. The provider could also know the IMEI if the phone was registered on their network for a while, and they can mark that IMEI as being a stolen phone. They will provide you with a new SIM for your phone number (same phone number), but you'll need a new phone to put it in.
