Flight Sim Project

For a summer project I built a full size F-16 cockpit. I am looking for programs that allow me to unlock the views and move instruments to where I need them using multi screen monitors. I have 2000,2003 and X and they to a certain extent do unlock but not the way I want. Is there anything else out there that will allow for this type setup?
