Hello, I own a 2000 Polo. This car does not have factory rear speakers.
The thing I was wondering about is, if I could use the RCA output from my stereo, directly to the speaker. Is it enough to only use RCA for signal and power?

Speakers: https://bilradiospes.no/produkter/bilstereo/hoyttalere/pioneer-ts-g173ci
Stereoplayer manual: https://goo.gl/efKo2F
Rearview of stereoplayer: https://goo.gl/yjAcXT

Would I only need one RCA-cable for each speaker?
Would this cable be sufficient? https://bilradiospes.no/produkter/bilstereo/montering-tilbehor/kabler-og-kabelsett/signalkabler-rca/ren5rca
Thank you in advance!

So I do not have to use a RCA cable at all, just ordinary copper wire?
How should I connect the wires, using soldering iron?

You don't use RCA connections directly to the speakers in any way.
If you want to solder speaker wire to speaker wire rather than splicing them with tape or a butt splice that is fine. Makes a secure connection.
If you connect the speakers as the manual says you only need speaker wire.
If you connect the RCA outputs to an amp you use a stereo interconnect cable with 2 RCA plugs at each end to do that. No splicing or cutting needed.
You would use speaker wire to connect the speaker to the amp.
