I have an update that tries to load everytime I shutdown - but it won't load and the PC just hangs so I have to force a shutdown. I've tried to restore but of course it can't shut down properly. How do I find this update and delete it?

go to software distribution folder in system 32 in windows and delete all the files and folders inside that folder, restart the system

or try a system restore for around 10 days back

ok that worked but next time I shut down it was back. Windows auto update is turned off so how do I find out what it is that needs disabling?

try to change the update settings to manual and try to install the updates one by one and you will get the culprit update i guess

updates are manual. I can't remember what other updates I have that are automatic.

none, except from other softwares like antivirus or adobe etc

Thats worked although I have now lost a log of any updates installed! Presumably next time I scan it will find ALL possible updates.
