I have 2 laptops. The laptop that i'm using at the moment has a display adapter of AMD M880G with ATI Mobility Radeon HD 4250, and its processors are AMD Athlon II P340 Dual-Core Processor. Laptop #2 has a display adapter which is AMD Radeon HD 6620G and processors AMD A8-3510MX APU with Radeon HD Graphics. I would like to know if I can switch laptop#1 and laptop#2 display adapters and processors. Also, which specs are better for gaming?

No you cant.Laptop#2's gpu is built into the processor which is why its called an APU instead of a CPU.
Laptop#1's gpu is soldered onto the motherbd and is not removeable.

And to beat you to it, no you cannot interchange the processors either.
