Not really off the top of my head since I typically do not look at laptops above $1,000 that often.

I would recommend the ASUS ROG Strix GL553VE which is basically the same laptop but with the more powerful GTX 1050 Ti for $1,147.

There are low end laptops with a GTX 1060 within your range like the Acer Predator Helios 300 and ASUS FX502VM-AS73. But they have pretty dim screens and not very good speakers. The Acer runs hotter than your average laptop with a Core i7 and GTX 1060. All these laptops have pretty short battery life with normal usage of only around 3.5 hours...
Yeah, it should be fine for what you want to do. If I am not mistaken, Adobe programs can make use of nVidia's CUDA cores. You may want to install a 8GB DDR4 RAM stick to increase the RAM to 16GB... at least that is what I would do.

I would actually recommend you consider the Dell Inspiron 15 7657 with the i7-7700HQ and GTX 1050 Ti for $999. I highly recommend you configure it with the IPS panel for $50 more. The laptop is a bit heavy at 5.76lbs, but that is because it has a 74WHr battery. Based on reviews battery life is roughly 7 to 8 hours with average daily usage (no games).

Here's a review for the i5-7300HQ version with the GTX 1050 Ti. It has a TN panel, Dell did not decide to offer an optional IPS panel screen until a few months after the review was uploaded to Youtube (due to a lot of complaints about the TN panel).
