Is there any way to output damage from something in a game, like minecraft, getting shot with an arrow, creeper explosion, stuff like that, and output it to something which would be connected to an LED strip, and make it blink, or flicker with the damage you receive?

I'm sure there is. Minecraft is written in Java so there is code reflecting damage.

There is a version of Minecraft made for the Raspberry pi that is designed around custom programming. That would be much easier to do.

Computers such as the Arduino and Pi are capable of interacting with the real world via digital programming easily however, without knowledge of coding your ability to do so will be limited.
