Is it possible to "tivo" the music channels on directv?

Not directly, no. You can create a auto-recording wishlist and
assuming it matches a music channel, the TiVo will record it.

The UI on playback, however, is less than ideal, the video is stuck at
whatever was displayed before playback, and there's no song
information shown.

It is possible when the artist's name appears in the program
information for the Music Choice channel. Try an Autorecording
Wishlist for Hilary Duff if your Channels You Receive list
has the Radio Disney Music Choice channel selected.

Some people consider this to be a "bug". Using an Autorecording
Wishlist for a recording artist can create a large number
of items in the ToDo list when the artist's name is in the
description for a Music Choice channel and that channel is
included in the Channels You Receive set.

However, I think you can use the audio out to feed a VHS VCR and
record the audio this way. I have done this before.

I now have the audio out going to a video/audio wireless 2.4ghz
transmitter that I feed to its companion receiver which connects the
audio into my receiver in an upstairs room. You could take this
signal and feed it into a computer to capture it.

If you hack it, TiVoWebPlus has no problems recording music channels.
